  1. Chop the cubes of Iberian cebo ham very small (brunoise). Set aside.<\/li>\n
  2. Peel and cut the onions and garlic (without the germ) into small cubes (brunoise). Set aside.<\/li>\n
  3. Chop the mixed mushrooms. Set aside and set aside some whole mushrooms for the final decoration of the dish.<\/li>\n
  4. Heat a little olive oil in a frying pan and fry the onions with the garlic over a medium heat.<\/li>\n
  5. Deglaze with the white wine and turn up the heat so that the alcohol evaporates.<\/li>\n
  6. Add the chopped mushrooms together with the diced ham and fry for a couple of minutes over a medium heat. Season with salt and pepper and set aside.<\/li>\n
  7. In the same pan, saut\u00e9 the whole mushrooms.<\/li>\n
  8. Season with salt and pepper and set aside.<\/li>\n
  9. Melt the butter in a saucepan over medium heat and add the flour to make a roux. Toast the flour.<\/li>\n
  10. Add the saut\u00e9ed mushrooms and ham. Mix, season with salt and pepper and add the nutmeg (to taste).<\/li>\n
  11. Add the milk little by little and stir constantly over a medium-low heat until it thickens. The batter should pull away slightly from the sides of the pan.<\/li>\n
  12. Pour the batter onto baking tray. Cover with cling film, stick it to the dough, cool and set aside in the fridge for 30 minutes.<\/li>\n
  13. Preheat the oven to 200\u00baC.<\/li>\n
  14. Spread two slices of Iberian cured ham so that one overlaps the edge of the other.<\/li>\n
  15. Add the mushroom and ham b\u00e9chamel sauce in the centre without letting it overlap the slices. Repeat the process until all the slices are finished.<\/li>\n
  16. Roll up the cannelloni, pressing it tightly so that it is well closed.<\/li>\n
  17. Bake the cannelloni on a baking tray at 200\u00baC for 15 minutes.<\/li>\n
  18.
