Instructions

  1. Preheat the oven to 200ºC.
  2. Peel and cut the onion and garlic clove (without the germ) into small cubes (brunoise). Set aside.
  3. Grate some Parmesan cheese. Set aside.
  4. Heat a little olive oil in a frying pan and fry the onion and garlic over a medium heat.
  5. Deglaze with the white wine and turn up the heat so that the alcohol evaporates.
  6. Add half of the chips and sauté for a couple of minutes over a medium heat. Add pepper, mix and set aside.
  7. Open the avocados in half, remove the stone and empty the inside a little, leaving a hole.
  8. Add a little sofrito of ham shavings to each of the avocados, along with a little grated cheese and a quail’s egg for each piece of avocado.
  9. Bake the stuffed avocados on a baking tray for 8 minutes at 200ºC.
  10. To serve, plate the stuffed avocados, add the remaining shavings on top and sprinkle some chopped chives.

40 ml white wine
