instructions:
- Cut the onion and garlic into small cubes (brunoise). Set aside.
- Boil the egg in a pot of water for 8 minutes. Cool, peel and dice.
- Set aside.
- Heat a little oil in a frying pan and fry the onion.
- When it starts to become transparent, add the garlic.
- Sauté for a few minutes until golden brown.
- Add the cubes of Iberian bait ham, the broad beans and the hard-boiled egg and cook everything together for 5 minutes over a medium heat.
- Season with salt and pepper.
Serve the broad beans hot and sprinkle chopped mint on top.
