  1. Preheat the oven to 190ºC with heat up and down.
  2. Chop the spinach. Set aside.
  3. Cut the ham cube into medium cubes. Set aside.
  4. Heat a little oil in a frying pan and sauté the diced ham. Set aside.
  5. Blanch the spinach in a pot of boiling water for 1 minute and stop cooking with cold water and ice.
  6. Drain, chop and set aside.
  7. Mix the eggs with the milk in a bowl.
  8. Sift the flour, baking powder and baking soda into the previous bowl.
  9. Stir until obtaining a homogeneous dough without lumps.
  10. Add the melted butter, the cheese, the spinach, the sautéed ham cubes, a little garlic powder and
  11. Provencal herbs (to taste). Mix with gentle movements.
  12. Grease the muffin tins with a little oil.
  13. Fill the muffin tins halfway with the previous batter.
  14. Bake the savory muffins for 25-30 minutes at 190ºC.
  15. Cool on a wire rack for 5 minutes.
  16. To serve, sprinkle some chopped chives on top of the salted ham and spinach muffins.
